Quercetin is a polyphenolic compound synthesized by many food plants and is an abundant micronutrient in human diet. It is attracting a large interest by virtue of its numerous beneficial biological effects: in fact, it has demonstrated anti-oxidative, free-radical scavenging and anticancer activities, protective effects towards cardiovascular disease, antiviral action, etc. Nevertheless, its bioavailability and bioefficacy is generally low due to its very poor aqueous solubility and scant stability in some environments and biological fluids. Several research efforts have been recently devoted to overcome these limitations by designing and testing appropriate formulations able to improve the quercetin bioavailability, to modulate the release kinetic and to target the release to specific tissue. This review presents the most interesting quercetin delivery systems till now developed.
