The paper analyzes formal (and non-formal) rules and transaction costs underlying the exchange of one of the most important export commodities of Southern Italy, through the study of oil sales signed in the capital from 1651 to 1681. The contracts examined prove the growing interest in the marketplace of Gallipoli in a phase which, in the international trade of southern oil, marked the passage from Venetian hegemony to that of England. The exchages are configured as a sale on documents (with payment against documents) in which the delivery of representative titles of the goods (bill of lading and, residually, receipt of deposit in the warehouse) and the various obligations agreed upon assume relevance not only to the final price of the transaction
